Vegetarian Green Dream Tart

You Will Need

  • 70g bag of pea shoots
  • 3 spring onions, finely sliced
  • 2 garlic cloves, diced
  • 3 large eggs
  • 175ml sour cream
  • 75g of feta cheese
  • 3 sheets filo pastry
  • olive oil
  • Freshly ground black pepper

Introduction

A no-fuss open crispy tart that makes an amazing vegetarian main course or quick lunch treat. Salty feta cheese, eggs and fresh pea shoots make a winning combination in this yummy tart. Perfect hot or cold lunch or dinner.

 

Method

  1. Preheat the oven to 180° Cut the filo pastry in half horizontally. Brush each piece with olive oil and place in a 20cm round tin with a loose base, turning each piece of pastry so it criss-crosses the one below. Scrunch the top pieces of pastry so they are not in points. Put the pastry case into the oven and bake for 10 minutes. Remove from oven and add the filling.
  2. Whisk the eggs with the sour cream and a little freshly ground black pepper, add the spring onions and garlic, cut the pea shoots in half and add to the mixture, stir well and pour into the tart case. Crumble the feta cheese over the top and return to the oven for 30 – 40 minutes until the tart is set and the feta is tinged brown. Leave to settle in the tin for 10 minutes before removing. Serve hot or cold.
