Egg Mayonnaise Bagel with Salad Cress

You Will Need

  • 2 sesame seed bagels
  • 1 tbsp mayonnaise
  • 3 hard boiled eggs, sliced or roughly diced
  • 1 punnet of salad cress
  • A pinch of freshly ground black pepper and salt


A classic sandwich filling in a hearty bagel, this lunchtime snack is a real treat. With the peppery kick of salad cress and seasoned to perfection, this sandwich will be a lunchbox favourite all year round.


  1. Cut the bagels in half and toast if desired. Snip half of the salad cress and place on the bottom half of the bagels. Top with the sliced / diced egg. Drizzle over mayonnaise and sprinkle with the remaining snipped cress. Season as required. Top with the other bagel half and serve immediately.
