Wonderful Colourful Sandwich-full

You Will Need

Smoked Salmon, Cucumber & Pink Radish Sandwich

  • 3 tbsp cream cheese
  • 4 slices of smoked salmon
  • 8 slices of cucumber
  • 1 punnet micro pink radish
  • 4 slices of wholemeal seeded bread

Cressto Caprese Sandwich

  • 125g ball of mozzarella, sliced
  • 8 cherry tomatoes, sliced
  • 3 tbsp cressto (see recipe below)
  • 4 slices of wholemeal seeded bread

Halloumi, Avocado & Garlic Chives Sandwich

  • 150g halloumi, sliced
  • 1 small ripe avocado, peeled
  • 2 tsp lemon juice
  • 1 punnet micro garlic chives
  • 4 slices of wholemeal seeded bread

Method

Smoked Salmon, Cucumber & Pink Radish Sandwich

Spread 2 slices of bread with cream cheese, place on the cucumber, smoked salmon and top with the snipped pink radish. Cover with a further slice of bread.  Cut in half to serve.

Cressto Caprese Sandwich

Spread 2 slices of bread with cressto (recipe below), top with the sliced tomatoes and mozzarella. Cover with a further slice of bread. Cut in half to serve.

3 punnets of salad cress
25g parmesan, finely grated
1 – 2 garlic cloves, peeled and chopped
3 – 4 tbsp extra virgin olive oil
Freshly ground black pepper and a pinch of salt

Place the snipped salad cress, chopped garlic, parmesan and olive oil into a blender or food processor and whiz for 20 seconds, scape down and whiz again until fully blended, season.

Cressto will keep for 4 – 5 days in a sealed jar stored in the fridge, why not make up double quantity and serve stirred through pasta, rice, gnocchi, new potatoes or as a topping for chicken or fish?

Halloumi, Avocado & Garlic Chives Sandwich

Pan fry the halloumi slices until lightly browned on both sides. Slice the avocado and drizzle with lemon juice.  Place the sliced browned halloumi onto 2 slices of bread and lay over the slices of avocado, snip the garlic chives on top and cover with a further slice of bread. Cut in half to serve
