Triple Sandwiches with Microgreens

You Will Need

Roast Beef, Brie and Pink Radish Sandwich

  • 4 slices bread, wholemeal seeded, sour dough or multi-seeded as desired
  • 6 - 8 slices of roast beef
  • 8 slices of brie
  • 1 punnet micro pink radish

Cheshire Cheese, Chutney and Salad Cress Sandwich

  • 4 slices bread, wholemeal seeded, sour dough or multi-seeded as desired
  • 4 tbsp pear and apple chutney
  • 10 slices Cheshire cheese
  • 1 punnet salad cress

Coronation Chicken and Garlic Chives Sandwich

  • 4 slices bread, wholemeal seeded, sour dough or multi-seeded as desired
  • 150g cooked chicken, diced
  • 4 tbsp mayonnaise
  • 2 tbsp natural Greek yogurt
  • 1 tsp ground garam masala
  • 2 tsp mango chutney
  • 12 raisins
  • 6 ready-to-eat apricots, finely diced
  • 1 punnet micro garlic chives

Method

Roast Beef, Brie and Pink Radish Sandwich

Butter your bread if desired. Place beef slices in waves on 2 slices of bread, add the brie slices followed by the snipped pink radish. Cover with a further slice of bread. Cut in half to serve.

Cheshire Cheese, Chutney and Salad Cress Sandwich

Spread 2 slices of bread with chutney, place on the Cheshire cheese slices followed by the snipped salad cress. Cover with a further slice of bread. Cut in half to serve.

Coronation Chicken and Garlic Chives Sandwich

  1. In a small bowl mix together the mayonnaise, yogurt, garam masala and chutney. Stir in the raisins, chopped apricots and the diced chicken.
  2. Spread this mixture over 1 slice of bread, snip the garlic chives on top and cover with a further slice of bread. Cut in half to serve.
