Party Nibbles with Microgreens

You Will Need

For Stilton, Fig and Honey Crostini with Garlic Chives

  • 1 punnet micro garlic chives
  • ½ white baguette
  • Olive oil, flavoured if desired
  • 85 - 100g stilton, crumbled
  • 2 figs, halved and cut into wedges
  • 2 tsp clear honey

For Avocado, Prawn and Pink Radish Blinis

  • 1 punnet micro pink radish
  • 8 - 12 cocktail blinis
  • 1 small avocado, peeled and stoned
  • 2 tsp lemon juice
  • Freshly ground black pepper
  • 8 - 12 prawns

For Prosciutto Ham, Melon and Red Mustard

  • 1 punnet micro red mustard
  • 6 slices Prosciutto Ham, cut in half
  • ¼ cantaloupe melon, peeled and deseeded

Method

For Stilton, Fig and Honey Crostini with Garlic Chives

  1. Slice the baguette into thin slices, drizzle with olive oil and lightly toast. Top with the crumbled stilton, fig wedges and garlic chives. Drizzle with honey to serve.

For Avocado, Prawn and Pink Radish Blinis

  1. In a small bowl mash the avocado, mix in the lemon juice and season with freshly ground black pepper. Place a spoonful of the mashed avocado onto each blini, top with a prawn and the snipped pink radish.

For Prosciutto Ham, Melon and Red Mustard

  1. Cut small slices of melon, snip the red mustard, and place on top of the fruit. To finish, wrap ½ a slice of ham around the melon.
