What is HACCP?

• Originally HACCP was a system used by the NASA space programme in 1959 to prevent things going wrong
• HACCP uses CODEX principles, which involves amongst others:
1. Identifying hazards and critical control points
2. Identifying critical limits
3. Establishing critical limits
4. Establishing a CCP (critical control point) monitoring system
5. Establishing corrective action procedures
6. Establishing verification procedures
7. Establishing documentation and records
