What is HACCP?
Originally HACCP was a system used by the NASA space programme in 1959 to prevent things going wrong
HACCP uses CODEX principles, which involves amongst others:

4. Establishing a CCP (critical control point) monitoring system
5. Establishing corrective action procedures
