Egg Mayonnaise Bagel with Salad Cress
You Will Need
- 2 sesame seed bagels
- 1 tbsp mayonnaise
- 3 hard boiled eggs, sliced or roughly diced
- 1 punnet of salad cress
- A pinch of freshly ground black pepper and salt
A classic sandwich filling in a hearty bagel, this lunchtime snack is a real treat. With the peppery kick of salad cress and seasoned to perfection, this sandwich will be a lunchbox favourite all year round.
- Cut the bagels in half and toast if desired. Snip half of the salad cress and place on the bottom half of the bagels. Top with the sliced / diced egg. Drizzle over mayonnaise and sprinkle with the remaining snipped cress. Season as required. Top with the other bagel half and serve immediately.
