Cous Cous and Bean Salad
You Will Need
For the salad:
- 120g sprouting beans
- 125g giant cous cous
- 50g French green beans
- 50g pomegranate seeds
- Freshly ground black pepper and salt
For the dressing:
- 2 tsp Dijon mustard
- 2 tsp white wine vinegar
- 2 tbsp light olive oil
Perfect for summer snacking or the kids’ lunch boxes, this recipe is healthy and packed full of protein to fuel you through the day. Fresh and filling you won’t be disappointed.
- Cook the cous cous according to packet’s instructions and rinse in cold water. Cut the French beans into 4 pieces and blanch.
- Combine the cous cous, sprouting beans, French beans and pomegranate seeds in a salad bowl, season with the freshly ground black pepper and salt.
- Mix the dressing ingredients together and stir well, serve drizzled over the salad.
Serves: 2 as a light meal, more if served as a sharing salad
